I want to analyze historical (quarterly) earnings per share forecasts from the management. How and where do I find them in the workspace or in Datastream?

On Workspace, you can use the the Data Item Brower tool to search for fields and parameters. On Datastream, you can use the Datastream Navigator.
Otherwise, please contact the helpdesk support team directly via LSEG Support and ask for fields and parameters that can provide the required data.
